Grape - 100% Shiraz from ‘Jack’s Block’ planted in 1921 by Jack Stanton.
Look - Deep dark red in colour.
Aroma - Lifted blackcurrants with a hint of coffee bean and chocolate.
Taste - Layers of plum and spice on the palate combine with dark chocolate shavings, smooth vanilla and medium-grained tannins. The acid is nicely balanced by the depth of fruit and complex structure, and selected oak ensures a rounded softness.
Occasion - This is a great food wine best served with quality meats like eye fillet or a slow roast.
Cellaring - Cellar up to 2028, with optimum drinking as a 6-8-year-old wine.
Winemaking - After our successful trials in 2016, we thinned the block to reduce yield and increase flavour intensity. The fruit was picked on 4 April and fermenters in our open-top vats. After fermentation, the wine was transferred to French (47%) and American (53%) oak for 10 months, with French oak building structure and spice, while the American oak enhancing the sweetness of the fruit.
