Aroma - Intense boysenberry & raspberry coulis.
Taste - The palate is all about the balance of fruit and soft tannins. This flavours are complex and include blackberry, boysenberry, rhubarb and Mocha. It has good fruit weight that continues to the last taste on the palate. Tannins are soft and gently gripping which makes the wine savoury and refreshing.
Occasion - Serve as an aperitif or pair with Christmas Turkey and cranberry sauce. Serve chilled.
Cellaring - Enjoy now or until 2025.
Winemaking - Shiraz grapes from our ‘Moodemere Vineyard’ planted by Norman Killeen in the 1960s were fermented in our open-top vats before being aged in French and American hogsheads prior to secondary fermentation in the bottle. The Traditional Method (Methode Traditionnelle) was used, a popular method to make elegant sparkling wine where the transformation from still to sparkling happens entirely in the bottle.
